Cheeses: 6 precious tips to keep them at their best

It is well known that cheeses and dairy products are better when fresh and artisanal, but we often do not know how to best preserve them. So here are the tips from Primotaglio, a platform for the purchase of very fresh ondemand food products, which landed in Milan at the end of 2014.

1- Pay attention to the temperature

Fresh cheeses must be stored at the coldest temperature, ie around 3 ° C; aged cheeses with cooked paste require a temperature between 10 ° C and 12 ° C while, for all other types of cheeses, they require a temperature between 6 ° C and 8 ° C.

2- Forbidden to freeze

A very important rule is not to store the cheese in the freezer as the flavor, fragrance and properties of the food will be affected upon defrosting.

3- Film banned

If purchased by the slice, the slices must be stored and wrapped in greaseproof paper for food and not in the common film. This is because the film could contain PVC which, in contact with the cheese fats, could release phthalates (substances that make the plastic elastic). The greaseproof paper must adhere well to the cheese, especially the cut part, in order to preserve its flavor and organoleptic properties.

4- Single wrapping

The different cheeses must be wrapped individually to avoid the transmission of aromas and molds. With good packaging, the other foods contained in the fridge are also preserved from the strong smell of cheese.

5- Away from bacteria

Do not keep cheeses in contact with unwashed vegetables and legumes to prevent soil residues from contaminating the food with bacteria.

6- Before serving ...

Always remove the cheese from the fridge for half an hour of consumption, let it oxygenate and serve it at a temperature of around 16 ° C. In this way, you can fully savor its flavor and benefit from its organoleptic properties.
