How did we choose the built-in ovens?

Have you ever tried to compare the pulsed heat electric ovens available on the appliance market? It is really a long and important job.

Together with our colleagues from Les Numériques, we conducted the investigation and tested the numerous functions of 25 built-in oven models: Bosch, Samsung, Sauter, Siemens, Brandt, Whirlpool, Indesit, Electrolux, De Dietrich, Ariston, Aeg, Gorenje , Smeg?

The tests carried out allowed us to compare:
- The speed of temperature increase (without being satisfied with the theoretical powers displayed) and their stability.

Catalysis or pyrolysis oven: how to choose?

Understanding of ovens, selection criteria

Pyrolysis and catalysis are two ways of automatically cleaning the oven at very high temperatures. Pyrolysis furnaces are widely preferred to catalysis furnaces.

Cheaper to buy, catalytic ovens are equipped with porous walls that absorb fat, which is destroyed during each cooking of dishes at over 200 ° C. This is how everything happens when cooking at the hotpoint. In addition, the walls must be cleaned regularly with a suitable degreasing washing liquid. In theory, it is recommended to change the walls approximately every 5 years.

The walls of the pyrolysis ovens are thicker and particularly resistant to temperatures of 500 ° C and above, which are activated during the cleaning of the pyrolysis. The temperatures are such that the ovens are then blocked and impossible to open. The ashes are then simply removed with a sponge. Ovens with pyrolysis are more expensive to buy, but they are also more expensive to use, as this cleaning is expensive in terms of energy. However, it is no longer necessary to replace the walls and maintenance is significantly reduced. Be sure to remove all accessories: guides, pins that cannot withstand these extreme temperatures.

Some steam ovens add hydrolysis cleaning. The steam softens the residue to loosen it, but this mode must be activated regularly.

The different types of heat: rotary, pulsed, convection, steam ...

There are four main types of heat in ovens, only the first three relate to built-in ovens:
- natural convection (i.e. simple resistances),
- rotating, pulsating or agitated heat,
- functions (grill etc.)
- and microwave


All tested ovens are rotary heat. Natural convection alone is no longer used. This operation, which is found in first-rate small-volume ovens or in combined oven / microwave ovens, consists in emitting heat from two resistances: one at the top (upper resistance), one at the bottom (lower resistance). Air flows naturally from the bottom up.

The "rotating heat" is the heat that is agitated and - more advanced - pulsed. Brassée = natural convection (two resistances, one at the bottom, one at the top) + a fan to turn the air. Pulsed = agitated + a circular resistance included in the fan for greater homogeneity. NB: rotary heat ovens are called multifunction ovens because they offer, depending on the recipes, the choice of natural convection or rotary heat, both mixed and pulsed.

Steam cooking heats up without drying, defrosts, steam ... A cavity appears to receive water, which is then transformed and pushed into the oven chamber. It can be more or less integrated into the front of the oven. They are multifunction ovens: natural convection + rotating heat + steam ...

How much does a built-in oven cost?

From less than 400 €. At this price, don't buy easily! We have tested many of them to find those that will not have problems with temperature homogeneity, whose ergonomics remain practical even if the screens or functions of the most advanced devices are not found. The cheaper electric ovens will have a lower energy class, a slightly lower volume (71 liters instead of 73 liters), a reduced range of accessories and a slower rise in temperature.

Medium: between € 400 and € 600. There are ovens with "good measured quality / ergonomics / functionality / price ratios. In our opinion, many will find the right choice on these prices, although more passionate cooks will demand extra features. Sometimes one or two options are still usually found. reserved for more expensive ovens, such as telescopic guides, advanced cooking functions, for professional cooking even at home.
Top of the range: from 600 euros to over 1,500 euros. At this price, a "good", fast and practical electrical appliance is not enough. At around 600 euros, one or two additional functions are commonly available. The combination of several functions, for example a steam system + telescopic guides + large color screen + smartphone linked mode to notify when cooking is finished, often quickly increases the price.
