Recipes to do with children: savory dishes

1) Pizza margherita

Ingredients (for 3 pizzas):

  • 500 gr of flour + that for the pastry board
  • 300 ml of water
  • 250 gr tomato puree
  • 200 gr of mozzarella
  • 3 tablespoons of extra virgin olive oil
  • 1 level spoonful of sugar
  • Salt to taste.
  • 7 gr of brewer's yeast

Preparation
In a bowl, dissolve yeast and sugar in 150 grams of warm water. In another bowl, pour 150 grams of water and add oil and salt. Combine everything with the flour.
Start kneading. When the dough is homogeneous, create a ball and let it rest for two hours in a dark place and covered with a cloth.
After two hours the dough will be ready and the dough can be divided into two or three parts, depending on how high the pizza is preferred.
Pour a little flour on the work surface.
With the help of the rolling pin, roll out the dough until the desired size is obtained. Move the dough to the pan. Pour the tomato puree previously seasoned with oil and salt. Add diced mozzarella (if you want to cook with other ingredients and make more elaborate pizzas, all you have to do is add the ingredients you love most with your child!)
Bake for 15/20 min at 250 °.

2) Potato croquettes by Benedetta Rossi

Ingredients (for about 15 croquettes):

  • 500 g boiled potatoes
  • 1 egg
  • 60 g grated parmesan
  • 50 g breadcrumbs
  • 12-15 mozzarella cherries
  • salt
  • fry oil

For the breading

  • 00 flour to taste
  • 1 egg
  • breadcrumbs to taste

Preparation
Boil the potatoes in boiling water, peel and mash them. Allow to cool and add the beaten egg, Parmesan, breadcrumbs and salt. Mix to obtain a homogeneous mixture and shape the croquettes. Insert a mozzarella.
Once all the croquettes have been prepared, bread them by passing them first in the flour, then in the beaten egg and finally in the breadcrumbs.
In a pan, heat the oil for frying. Fry a little at a time, turning the croquettes on all sides.
When they are golden brown, drain them on absorbent paper, then arrange them in a nice serving dish.

3) Halloween pumpkin risotto

Ingredients (4 child servings):

  • extra virgin olive oil
  • Grana cheese
  • salt
  • onion
  • 350 grams of rice
  • butter
  • 1 pumpkin

Preparation
To celebrate October 31st together, empty a pumpkin; cut 400 grams of pulp into small pieces and boil for 15 minutes. When it is soft, drain and blend half of it. Store the cooking water.
In a saucepan, sauté an onion with oil, add the rice and toast it. Then pour the pureed pumpkin and the cooking water with a little salt. Finally add the leftover pulp. Stir in butter and grate plenty of parmesan.

4) Baked spinach bites

Ingredients (for 4 servings):

  • 1 kg. of spinach
  • 2 potatoes
  • 1 egg
  • 2 tablespoons of grated Parmesan cheese
  • Extra virgin olive oil
  • salt
  • Bread crumbs

Preparation
Wash the potatoes and boil them with all the peel. Clean the spinach, wash them and cook them in a pan with very little water. Then squeeze the spinach, chop finely and pour them into a pan with the boiled potatoes, peeled and reduced to a puree, along with a tablespoon of oil, beaten egg, Parmesan cheese and a pinch of salt. Mix the mixture well and prepare meatballs the size of a walnut. Sprinkle with breadcrumbs and place in a baking tray lined with parchment paper. Bake at 180 degrees, leaving it to cook for about 20 minutes.

5) Christmas cookies

Ingredients (for about 60 cookies):

  • 700 grams of flour
  • 3 eggs
  • 150 ml of milk
  • 175 g of sugar (and a little icing sugar)
  • 175 gr of butter
  • cocoa
  • powdered ginger
  • yeast
  • lemon
  • colored sprinkles
  • 60 g of honey

Preparation
Mix flour, honey, sugar, butter, egg yolks, a tablespoon of yeast, 3 teaspoons of ginger and 3 teaspoons of cocoa, adding the milk a little at a time.
Let the dough rest for 30 minutes. Then roll out a 1/2 cm thick sheet and, with the help of molds, cut out the shapes in the shape of a star, heart, fir ...
Place the biscuits on a baking tray with paper oven. Make a hole for the tape with a toothpick. Bake at 175 ° C for 15 minutes.
For the icing (if you want to add it), mix egg white, powdered sugar and a drop of lemon until the mixture is thick; adding cocoa will give you a brown glaze.
Remove from the oven, allow to cool and cover with colored icing and sugar. Decorate as desired.

6) Pancakes

Ingredients (for 10 pancakes):

  • 200 grams of milk
  • 200 gr of flour (0, 00, 1, wholemeal, spelled)
  • Pinch of salt
  • 2 teaspoons of baking powder
  • 1 tablespoon of sugar
  • 1 egg
  • 2 tablespoons of seed oil (to taste)
  • Vanilla
  • Maple syrup for serving

Preparation
Whip the eggs with the sugar; add the oil and milk.
Gradually add the sifted flour with baking powder and vanilla. Then grease the pan and remove the excess grease.
With the help of a measuring cup to make them all the same, pour the mixture and let it cook until holes have formed on the surface.
At this point, turn the pancakes to make them brown and remove them from the heat.
Serve as desired with maple syrup or red fruits / bananas for garnish.

7) Misya's yogurt muffins

Ingredients (for 6 muffins):

  • 50 gr of potato starch
  • 75 grams of flour 00
  • 80 grams of sugar
  • 1/2 sachet of baking powder
  • 1 egg
  • 125 grams of yogurt
  • 50 gr of butter
  • 1 tablespoon of honey
  • 1 tsp grated lemon peel
  • granulated sugar

Preparation
In a bowl, mix the flour with the starch, sugar, baking powder and grated lemon peel.
Separately, mix the egg with the yogurt, honey and melted butter.
Combine the liquid ingredients with the buckets and mix the dough with a wooden spoon.
Fill the muffin cups 2/3 of their height and bake in a preheated oven at 180 °.
Bake the yogurt muffins for 15 minutes. As soon as they are removed from the oven, sprinkle them with the granulated sugar.
Let it cool and taste!

8) Egg-free chocolate salami

Ingredients (for 6 people):

  • 250 gr biscuits
  • 100 gr butter
  • 100 gr icing sugar
  • 50 gr unsweetened cocoa powder
  • 100 gr dark chocolate
  • 80 gr hazelnuts

Preparation
Crumble the biscuits with your hands or crush them with a rolling pin but without reducing them to powder.
In a large bowl, place the coarsely crumbled biscuits, the unsweetened cocoa powder, the sugar and the hazelnuts.
Melt the dark chocolate in the microwave for 3 minutes at 650 watts or in a bain-marie.
Combine the softened butter and the slightly cooled melted chocolate in the bowl with the biscuits.
Mix everything with your hands until you have a homogeneous mixture.
Model the mixture on parchment paper to create a cylinder the size of a salami or two smaller ones.
Roll the salami in parchment paper and put it in the fridge for 2 or 3 hours.
When you take it out you can sprinkle it with powdered sugar and serve it cut into slices.
