2) Raspberry cheesecake
Ingredients for 4 people)
5 Digestive type biscuits
30 gr of melted butter
125 gr white yogurt
100 ml whipped cream
2 tablespoons of powdered sugar
raspberries, chocolate and meringues to decorate
Melt the butter and mix it with the biscuits that you have previously crumbled.
Distribute this base in 4 glasses and place in the fridge to harden while you prepare the cream.
Whip the cream with sugar until it is very firm.
Add the yogurt to the cream and mix from top to bottom to avoid disassembling the cream.
Pour the cream onto the biscuit base, decorate with raspberries, crumbled meringues and pieces of chocolate.
Refrigerate until ready to serve. *
3) Panna cotta with peaches
Ingredients (for 6 people)
250 ml of milk
250 ml of cream
8gr of agar-agar or 2 sheets of softened isinglass
200 ml of peach smoothie
100 gr white sugar
1 teaspoon of vanilla extract
Put the cream, milk, sugar and gelatin (or agar) in a saucepan.
Bring to a boil and cook for about a minute.
Remove from the heat and add the vanilla extract and pureed peaches to the mixture.
Place in molds and let cool for at least 3 hours.
When ready to serve, remove the panna cotta from the molds and prepare the caramel by caramelizing the sugar and honey in a saucepan together with the thyme, to be placed on the heat over low heat until it has taken its beautiful golden color.
Drop a few tablespoons of caramel on the panna cotta: the sauce will crystallize creating a very sweet shell. *

Ingredients for 4 people)
2 very fresh eggs
3 tablespoons of sugar
200 gr mascarpone
100 gr whipped cream
2 teaspoons of instant coffee
cocoa to decorate
Dissolve the coffee in two teaspoons of cream previously heated. Leave to cool.
Whip the egg yolks with the sugar until they are perfectly foamy.
Also whip the whites until stiff and the cream, firmly.
Add the coffee to the cream of egg yolks, then the mascarpone and finally the cream and egg whites, stirring from top to bottom so as not to dismantle the mixture.
Pour into small glasses, decorate with cocoa and serve cold, after letting them rest in the fridge for at least a couple of hours. *
6) Crème brûlée
The crème brûlée in a sweet spoon version: a delicious and crunchy dessert at the right point.
7) Pineapple sorbet
700 gr of ripe pineapple
100 grams of sugar
110 ml of water
a choice of rum or cinnamon to flavor the syrup
The night before, cut the ripe pineapple into pieces of about one centimeter, put them in a bag and place them in the freezer.
In a saucepan, prepare a syrup with the sugar, water and the chosen aroma.
Allow to boil until the syrup is thick but still clear and place in the refrigerator to cool.
The next day, put the pineapple in a blender, add the syrup and stir until the mixture is very creamy and fluffy.
Serve immediately or store in the freezer for a few days. *
8) Chia seed pudding
Ingredients for 4 people
80 g of chia seeds
500 g of almond milk
1 tablespoon of honey or maple syrup
the tip of a teaspoon of vanilla essence
fresh fruit to taste
Put the almond milk in a bowl and add the honey (or the maple syrup) and the vanilla essence. Add the chia seeds and mix well. Transfer everything into single-portion glass jars and put them in the fridge to rest for at least 3 hours. Serve with fresh fruit or berries.
9) Exotic panna cotta
Ingredients for 8 people
500 ml of cream
80 g of sugar
2 sheets of isinglass
1 vanilla pod
1 dragon fruit
1 ripe mango
70 g of sugar
Combine the cream, sugar and halved vanilla in a saucepan. Put on low heat for 15 minutes. Be careful not to boil. Soak the gelatin sheets in cold water for about ten minutes, then squeeze well and add the cream, then turn well to dissolve it. Let it cool, then add the pulp of the dragon fruit. Pour into molds and refrigerate for at least 5 hours. Prepare the sauce by blending the mango pulp and sugar. Serve the panna cotta garnished with a little mango sauce. **
10) 3 chocolate mousse
Ingredients for 5-6 people
100 g of dark chocolate
100 g of milk chocolate
100 g of white chocolate
325 whipping cream
6 tablespoons of milk
2 passion fruit (or berries)
Melt the three chocolates each with two tablespoons of milk. Let it cool and in the meantime whip the cream. Mix the dark chocolate with 125 g of whipped cream, the milk chocolate with 100 g of cream and finally the white chocolate with the last 100 g of cream. Gently mix from top to bottom and add the chocolate cream.
Compose the portions with the 3 layers of mousse, decorated with a little passion fruit pulp. If you prefer you can use berries or slices of nectarine. Leave to rest in the fridge for a few hours before serving. **
